30-Minute Lemon Garlic Shrimp Bowls

1 lb raw shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

2 cups cooked quinoa (or rice of your choice)

1 cup cherry tomatoes, halved

1 cup baby spinach

1 avocado, sliced

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prep the Shrimp: In a medium bowl, toss the peeled and deveined shrimp with olive oil, minced garlic, lemon zest, juice, red pepper flakes, salt, and pepper. Let it marinate for about 10 minutes while you prepare the rest of the ingredients.

    Cook the Quinoa/Rice: If you haven’t already, cook the quinoa or rice according to package instructions. Set aside.

      Sauté the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp in a single layer and cook for about 2-3 minutes on one side until they turn pink and opaque, then flip and cook for another 2-3 minutes. Be careful to not overcook. Remove from heat.

        Assemble the Bowls: In each serving bowl, layer a generous scoop of quinoa or rice, followed by a handful of baby spinach, halved cherry tomatoes, and the sautéed shrimp.

          Add Avocado: Top each bowl with slices of avocado for creaminess and garnish with fresh parsley.

            Serve: Serve immediately with lemon wedges on the side for an extra zing.
