Ingredients

1 lb (450g) boneless, skinless chicken breasts, thinly sliced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

4 large flour tortillas

1 cup shredded cheese (sharp cheddar or Mexican blend)

1/2 cup sour cream or Greek yogurt

1/4 cup fresh cilantro, chopped (optional)

Lime wedges for serving

Instructions

Marinate the Chicken: In a mixing bowl, combine the chicken slices with olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Toss until the chicken is well coated. Let it marinate for about 10 minutes while you prepare the vegetables.

Sauté the Vegetables: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the sliced onions and bell peppers. Sauté for about 5-7 minutes, or until they are softened and slightly charred. Season with salt and pepper, then remove the veggies from the skillet and set aside.

Cook the Chicken: In the same skillet, add the marinated chicken. Cook over medium-high heat for about 7-10 minutes, or until the chicken is fully cooked and no longer pink in the center. Stir occasionally to ensure even cooking.

Combine and Warm Tortillas: Once the chicken is cooked, add the sautéed peppers and onions back into the skillet. Mix well and heat through for an additional 2-3 minutes. Meanwhile, warm the tortillas in a separate pan or microwave them for about 20 seconds until pliable.

Assemble the Wraps: Lay a tortilla flat and add a generous scoop of the chicken and veggie mixture in the center. Top with shredded cheese, a spoonful of sour cream, and a sprinkle of fresh cilantro if desired.

Wrap It Up: Fold the sides of the tortilla over the filling, then roll from the bottom up to create a wrap. Repeat with the remaining tortillas and filling.

Serve: Cut the wraps in half if desired and serve with lime wedges on the side for added zest. Enjoy your fresh and flavorful chicken fajita wraps!
